I am not expecting delivery of my R1S until 2023 but I am moving overseas (South America) sometime next year. Customer Service says they wouldn’t be able to support servicing my R1S if I shipped it down to South America but I wanted to see if anyone else is either considering or has done this with their R1T or R1S.

Also - What’s the consensus on how bad an idea it is to ship it down without servicing options?

As someone who is from Brazil, and is in Brazil right now, I would say pretty bad idea. I wouldn't do it. But I am from Rio de Janeiro which makes more likely that the car gets stolen than anything else. I also would not want the attention of driving a car that costs more than most people's house. Your case may be different since you are from Chile.

Well, I dont think it's a great idea to drive or own a car that is pricey in South America, except if you hire separate security for the car. I agree with what Sultanum wrote above, your case may differ a little, but it's still South America. However, you should check car transport prices and services. From my experience I do not recommend you calculate the whole shipment by yourself (it’s a tedious process and you certainly don’t find the cheapest variants). Try finding a good service that will do it for you. You might find a good deal for your situation.
