The "U" tire speed spec is 124mph maximum. I don't know if Rivian is using U tires, but if they are, then that would explain the limit.
The ratings of all tires, U,H,V,Z etc are limited to their respective speed ratings. They should be able to do their speed rating for an hour straight. Meaning if your tire is rated U and limited to 124mph, it means it could maintain that speed for an hour! So your tire is not gonna explode if you happened to do 125mph.

To each his own. Some like to go fast while others like to go slow (er). ICE cars have an easy way to get past the 155 limit. I've seen lots of cars cruising at well over 155 on the autobahn. The Germans make it look very normal and their style of driving is different. One of my cars is limited to 195. I would have loved to try that out but am under licensing restrictions.
